Ingredients of Badusha
STEP : 1
Take a large bowl,add maida, baking soda into a bow,add four tablespoon ghee into maida get a mixture of all this with your finger tips finally it resembles like bread crumbs then add yogurt or curd into maida and knead into a soft dough and allow it to 45 mins to 1 hour for softness.
STEP : 2
After an 1 hour take a soft dough and divide it into a small balls or lemon size balls, after that shape into a smooth balls, remember the ball should not be over large or small the size of the ball should be medium,make sure the dough balls should not be over work,take a ball and make a slight dent in the center of the ball by using your thumb and leave it around 30 to 45 minutes.

Take a non stick kadai or non stick tawa for a deep fry of small balls.Take a normal kadai, heat sufficient oil after getting hot ,make sure not get too hot, gently slide a balls into a oil to get a soft balls.
STEP : 4
You can also slide 5 or 6 balls at a time and get it deep fry,the balls turns golden brown,make sure when the balls is in deep fry the oil should be in low flame,gradually the badusha will start floating to the top,slightly turn the other side till it turns golden.

After the colour changes golden brown remove with a slotted spoon and drain it throughly. The entire process will take around half an hour to 45 minutes for deep fry.Set the balls aside to cool for 45 minutes until it reach room temperature.
STEP : 6
Take a kadai,add two cups of sugar, add 1 cup of water and cook the sugar thoroughly,stir the sugar continuously till it get dissolves.
STEP : 7
Cook the sugar continuously until it turns syrup manner after cooking the sugar, make sure the sugar syrup attains a two-string consistency.
STEP : 8
Separate the cooled badusha's into a new plate remove the sugar from the gentle pour the sugar syrup and leave it soak for 2 hours to get tasty sweet badusha's. After soaking gently remove the badusha's from the sugar syrup and place it on a serving plate,optionally you can decorate the badusha's with pistachios,badam chops or saffron if you like.
