STEP : 1
To make a badam phirni rice pudding take a cup of basmathi rice or brown rice,rinse a twice of time in water and soak the rice in water for 30 minutes keep basmathi rice asides.

Now drain the water completely after soaking,turn on the flame take a thick broad pan or kadai add brained rice in kadai or let them dry on there own(your wish).

Badam phirni,a rice based creamy dessert,to make a thin coarse paste,saute the rice untill it dry or wipe the grains dry with by using kitchen towel.

To prepare a rice milk mixture i have taken the ingredients drained rice,blanched almonds,green cardamom to make a blender of all these i have taken initially a drained basmathi rice into a separate pan.

STEP : 5
To prepare a rice milk mixture add blanched almonds,green cardamom around ten to twelve along with rice for to make a blender,while cardamom enhances its rich flavour and aroma,now grind all this into a semi powder.

Turn on the flame put a heavy based pan pour one and half liter milk,add three to four green cardamom into milk and bring it to boil over a medium flame.

While grinding a rice milk mixture add with one tablespoon of water to make a thin coarse paste don't add too much of water and mix it with half cup milk and stir it without any lumps.

When the milk starts boiling,add rice milk mixture completely and stir it well around five to seven minutes while stirring reduce the flame to low.

Now it become a rice milky and creamy dessert mix it well and cook with continuously stirring,scrape the edges in sides of the pan and collect a cream.

Now it's time to add two cup of sugar into boiling milk,you can also use powder sugar for it mix it well untill the sugar dissolves it into rice milk cream,add a collected cream into boiling milk.

For colouring you can also add soaked saffron strands(dissolved in one tablespoon milk) into a creamy milk,take a separate pan add remaining one and half liter milk to prepare a rice flour milk.

Along with the milk add one and half cup of milk powder and mix it well without any lumps,you can also add milk maide instead of milk powder for a better taste.

Add three tablespoon of rice flour now stir it continuously of all this combinations to prevent lumps,continuous stirring untill it turns to thickening.

Now add rice flour milk mixture into the boiling milk stir it well untill it begins to a nice creamy texture and keep in low flame,cook around ten minutes for thickening.

You can also add the dry fruits(if you like) in these final stage ,our phirni recipe is ready now turn off the flame,let it cool around 10 minutes transfer the badam phirni in to serving bowl finally ganrnish with grated coconuts and dry fruits.NUTRITIONAL VALUE of badam phirni for per serving calories contains 125,total fat 4.7g,protein 7.6g,cholesterol 17,sugars 22.0g.
