This is a mixed vegetable recipe. It is cooked in a similar fashion as Avial, few of the ingredients are customized. We do not use tamarind paste over here but rather tomato and rich and thick coconut milk. Sweet Potato is also added and the vegetable is cooked with a sweet taste. This is served best with rice.

0.50 cup Yogurt
0.75 cup Coconut Milk

0.25 tbsp Sugar
0.25 tbsp Turmeric

Avial curry

Wash and chop all the vegetables to a consistent size so that they are uniformly cooked and none of them melt or is under cooked.

Heat oil in a kadai. Add mustard seeds.  Wait till that splatter.  Add the chopped vegetables and stir them continuously.

Add salt and sugar and tomatoes. Add the mustard paste and mix well and cook in simmer for 2-3 minutes so that the masala mixes uniformly.

It's very delicious and looks yummy. The presentation was really good and simple. Basically the mix of veggies are healthy you can always go for your own combo of veggies depending on the availability and your choice. It is not a solid type of dish, but slightly looks like semisolid type. While making this it's always important to cook the veggies well .
