It is a simple but tasty Potol recipe. Also it is a very common dish in Bengali families. Potol are also known as Parval in Hindi. Potato and Gourd ( Parval/ potol ) cooked in a ginger and cumin based gravy usually served with steamed rice.

Ingredients of Aloo potoler dalna

4.00 no Parwal

1.00 tbsp cumin seed
0.25 tbsp ginger paste
0.25 tbsp sugar
0.25 tbsp turmeric powder
4.00 no green chili
0.50 tbsp ghee
0.25 tbsp garam masala
0.25 tbsp salt

Aloo potoler dalna

Slightly peel the skin of potol/ parwal. Don’t remove the complete skin of potol/parwal otherwise it will become too soft. Also peel the skin of potato and cut both potol/parwal and potatoes into pieces.

Wash the potol/parwal and heat oil in a non-stick pan. Shallow fry the potol/parwal and transfer it into a separate plate.

Make a paste of ginger, green chili and cumin seeds by using grinder. Add this paste and saute for a second. Add turmeric powder and salt as required. Now add the fried potatoes and mix well with the masala.

Add water for making gravy and also add 1 green chili and a pinch of sugar. Add the fried potol/parwal. In place of water you can also add milk for making it tastier.

Reduce the flame to low and cover it for at least 10 minutes. Remove the cover and check the consistency of gravy. The gravy should not be too light.
