STEP : 1
Slightly peel the skin of potol/ parwal. Dont remove the complete skin of potol/parwal otherwise it will become too soft. Also peel the skin of potato and cut both potol/parwal and potatoes into pieces.
STEP : 2
Wash the potol/parwal and heat oil in a non-stick pan. Shallow fry the potol/parwal and transfer it into a separate plate.
STEP : 3
On same non-stick pan add cumin seeds and saute it for a second and then add the cubes of potatoes. And shallow fry it for few second. Transfer it into a plate.
STEP : 4
Make a paste of ginger, green chili and cumin seeds by using grinder. Add this paste and saute for a second. Add turmeric powder and salt as required. Now add the fried potatoes and mix well with the masala.

Add water for making gravy and also add 1 green chili and a pinch of sugar. Add the fried potol/parwal. In place of water you can also add milk for making it tastier.
STEP : 6
Reduce the flame to low and cover it for at least 10 minutes. Remove the cover and check the consistency of gravy. The gravy should not be too light.
STEP : 7
Turn off the flame and add 1 teaspoon of ghee and garam masala and cover it again for 2 minutes. Transfer it into a serving plate and garnish it with green chili.
