For Maida Flour Preparation

STEP : 1
Take two cups of sifted or sieved all purpose flour or maida in a seperate bowl.

STEP : 2
Add a cup of wheat flour or atta in a bowl ,adding atta gives softness.

STEP : 3
Add a tablespoon of baking powder in a flour and add a little pinch of baking soda.

STEP : 4
Add little bit of sugar for taste and soft ,Don't add it too much of sugar.

Add two tablespoon of ghee or clarified butter in mixed flour to make soft dough.

STEP : 6
Add half cup of fresh yogurt or curd in a flour and mix it completely.

STEP : 7
Add little bit of salt for taste ,Don't add it too much ,we need to add in stuffing mixture.

Gradually add little by little of water and knead a smooth dough by using hands

When dough is prepared roughly,add a tablespoon of cooking oil and khead till it turns soft.

After kneading a soft dough ,close the lid and leave it under 10 to 15 minutes.
For Potato Masala Preparation

STEP : 1
The key ingredients to prepare chilli aloo kulcha, we need potatoes,maida,wheat flour,red chilli powder,garam masala,coriander powder,ghee,curd,baking powder,green chillies,ginger,sesame seeds,sugar,oil and salt.

STEP : 2
Initially turn on the flame, wash and add three medium size potatoes in a pressure cooker.

STEP : 3
Add three cups of water ,close the lid and leave it for 2 to 3 whistles.

After 2 to 3 whistles ,When the potatoes are boiled,drain the water and peel the skin.

Mash the peeled potatoes very well by using hands or grate the boiled potatoes or use potato masher.

Add a tablespoon of red chilli powder in a mashed potatoes and mix it completely.

Add 1/4th cup of finely chopped fresh coriander leaves or cilantro and mix it completely.

Add a tablespoon of garam masala for more spices in the potato mixture and mix it.

Add two nos of finely chopped green chillies in the potato mixture and mix it.

Add half tablespoon of coriander powder or dhania in the potato mixture and mix it.

Add little bit of salt or as per taste in the potato mixture and mix it.

When everything is completed ,Take some amount of mixture and make it even size balls.

Take a knead dough and divide into small balls or lemon size balls ,don't make it too much big.

Roll the balls little bit by applying oil on hands ,roll it evenly on all sides.

Add a medium size potato balls in center part of roll ,the bottom roll should be thick.

Now bring all the edges of the roll and cover it and make it round once again.

Do the remaining balls in a same way and keep it aside in a plate.

Apply foil sheet or cover on a flat surface ,roll it and apply few coriander leaves.

Add little bit of white sesame seeds or can use black sesame seeds in a roll.

Sprinkle half tablespoon of finely chopped or crunched ginger for more spices on a flat roll .

Turn on the flame place a pan or griddle when it turns nice hot ,place a roll

When the kulcha or paratha are lightly hot,add a tablespoon of cooking oil and let it cook.

Flip it other sides and cook it for another few minutes .Our tasty chilli aloo kulcha or paratha is ready to serve with spicy chutney.
