Aloo Capsicum Curry – A Creamy And Tasty Aloo Capsicum Curry Recipe
Aloo capsicum curry is very delicious and healthy recipe. This is a simple Indian curry recipe made with mildly spicy. It is very easy to make at home and also quick side dish.
Ingredients
Aloo Capsicum Curry
- 3.00 nos Potato
- 2.00 nos Capsicum
- 2.00 nos Onion
- 3.00 nos Tomato
- 4.00 nos Garlic Pods
- 1.00 tbsp Coriander Seeds
- 5.00 nos Cashew Nuts
- 4.00 nos Curry Leaves
- 0.25 cup Coriander Leaves
- 0.75 tbsp Salt
- 1.00 tbsp Red Chilly Powder
- 0.25 tbsp Turmeric Powder
- 0.50 tbsp Garam Masala
- 3.00 tbsp Oil Or Ghee
- 0.50 tbsp Fennel Seeds
- 0.25 cup Water
Instructions
Aloo Capsicum Curry
- Peel the potato wash and chop as small cubes and also chop two capsicums into small slices.
- Fine chop two onions into fine slices and chop three tomatoes and peel off some garlic pods.
- For Making Tomato Puree: Take a mixer jar add those chopped tomatoes and add one tbsp of coriander seeds, some garlic pods and some cashew nuts.
- Grind the added ingredients into fine paste to get thick tomato puree, do not add any water the tomato juice is enough for that.
- Heat a pan add one tbsp of oil, when it gets hot now add the chopped potatoes and roast them in medium flame till it gets crispy and soft.
- In that same pan add chopped capsicum into them and saute them till it get slightly saute.
- Transfer the roasted potatoes and roasted capsicum into a plate and brings to cool for few minutes.
- Heat a pan add two tbsp of Ghee or Oil then splutters some fennel seeds and some curry leaves with them.
- Then add some chopped onions with them and roast them for few minutes till the golden brow color obtains.
- Then add the powdered ingredients such as red chilly powder, little turmeric powder and some garam masala powder and stir them.
- Then add the freshly prepared Tomato puree with them and saute well for few seconds.
- Brings to boil the added masala ingredients till the oil ooze outs, keep stir in low flame to avoid bottom burn.
- Then add the roasted potato cubes and capsicum slices with them and stir well for a while.
- Add little water and enough salt for them, you can add little more water if need some gravy.
- Cover the lid and give some cooking time for boil the potatoes and capsicums, and keep stir within a time gap.
- When the vegetables are boiled, finally add some chopped coriander leaves with them and serve hot, You can also garnish with some fresh creams.
