This is a egg bhurji recipe made using egg and small cubes of potato and lots of garlic and onion and freshly ground garam masala. It is made hot by adding green chili slices. It is a dry item and is usually served with hot chapati and onion slices or lachha salad.

Aloo bhurji

Take the potato, wash and peel it and cut it into thin long slices. Chop the onion into thin long slices. Slit the green chili and chop the tomato into fine pieces. Peel and wash the garlic so that a fine paste can be made. Set aside 2 eggs to make the bhurji.
