Ingredients of Aloo bhurji
STEP : 1
Take the potato, wash and peel it and cut it into thin long slices. Chop the onion into thin long slices. Slit the green chili and chop the tomato into fine pieces. Peel and wash the garlic so that a fine paste can be made. Set aside 2 eggs to make the bhurji.

Heat oil in a kadai and add the potato slices and onion along with the slit green chili and fry them well till the onion turns pinkish.

Add the salt, sugar, turmeric and garlic paste and mix all the ingredients well and cook for 3-4 minutes so that the potato boils.

Add the tomato cubes into the kadai and mix it well with the rest of the ingredients and cook till the tomato softens and melts.

Heat oil in another pan and add the 2 eggs beaten with a little salt and scramble them well so that they form an uneven bhurji.

Add the scrambled eggs to the kadai with potato and the masala and mix well and cook for 2-3 minutes.
STEP : 7
Cover the kadai with a lid and cook for 4-5 minutes in simmer so that the vegetables are boiled and all the ingredients blend well.

After it is completely cooked add some garam masala powder and then mix it well and pour in a bowl and then serve with the chapati.
