Ingredients of Adhirasam
STEP : 1
The key ingredients to prepare adhirasam,we need maavu raw rice,jaggery and oil to deep fry,you can include white sesame seeds or black sesame seeds it is optional.

To prepare rice flour, wash and soak 500 grams of raw rice in a seperate vessel for maximum 3 hours.
STEP : 3
For 500 grams of adhirasam rice ,i have taken 400 grams of jaggery or mandhai vellam, measurement of these both is very important.

After 3 hours completed ,drain the water completely at the same time the soaked rice tends to soft.

To drain the water ,take a seperate cotton white cloth or muslin cloth add the drained rice in a white cloth.

Then fold the white cloth or tie it so that it absorbs the extra water completely ,keep it under 10 minutes.

After 10 minutes open the cloth ,rice becomes light dry and keep it under fan ,spread it all over sides thoroughly ,keep it under 25 to 30 minutes.

After 25 to 30 minutes ,rice should be seperated lightly ,dont keep it under sunlight because the rice should not be over dried,now add little amount in a blender jar.

Now grind it till it turns rava or suji consistency ,it should not become a thin powder then sieve it.

Finally after sieving ,add two or three tablespoon of kurunai or rava consistency rice flour into the sieved flour,now press it gently on top of the rice flour.

To prepare jaggery syrup ,take a seperate bowl add 400 grams of jaggery in it ,take a thick vessel to boil jaggery syrup.

Add half tumbler of water,dont add excess water in it because tends to water while boiling and let it boil.

When the jaggery syrup starts boiling ,check it by pouring a liitle bit of syrup in a water containing plate or bowl,it should be uruttu padham or thakkali padham .

Take a seperated rice flour,add little by little jaggery syrup and mix it using stick or spatula continuosly.

After mixing the mixture sholud be light thick ,if you need to deep fry immediately the mixture should be below shown image.

If you need soft adhirasam ,then leave it for 2 days at room temperture not in fridge ,am going to deep fry after 2 days ,so that now i mixed in lightly pouring consistency.

Two days later ,the mixture should be above shown image or dough consistency,its ready to deep fry .

Take a non stick pan ,add oil and let it heat for sometime ,use bottomed kattai for deep fry if possible.

Take a plantain leaf or aluminium foil sheet then apply tablespoon of oil or ghee over the sheet .

Grease a palm with little bit oil ,take a small amount of mixture and make it round shape .

Place a mixture in a aluminium foil sheet and make it flatten little bit ,the flatten should be 3mm size thick.

When oil heats ,Drop the flatten shape into the mixture carefully and fry it for few seconds .
